We all like French fries but with this recipe we raise them to a higher level, you could say that they are Gourmet French fries, a spectacular flavor and without any lactose.
Ingredients for the Provencal sauce
- Olive oil
- Chopped garlic
- Chopped parsley.
- Provencal herbs.
- Sherry vinager.
- Salt and pepper.
Preparation of gourmet fries
First of all, we peel and cut the potatoes in the New Bridge style (Pont neuf), that is, with the approximate thickness of a little finger (1/2 cm) or in wedges like the typical delux ones.
The next step would be to confit them in plenty of olive oil along with a head of garlic. To do this, we simply prepare a frying pan with the olive oil at a low temperature (160º), add the garlic cloves with their skin and everything together with the potatoes, moving from time to time.
Once they are well poached (approximately 20 minutes) we remove them together with the garlic to a source and cover them with transparent film and let them rest for at least ten minutes.
Once they have rested, we will go on to fry the Gourmet fries and the garlic in abundant olive oil until we get a “movie” golden brown.
It would only be necessary to tie and sauce with the provenzal.
To prepare the sauce
Put the olive oil in a bowl, add the chopped garlic and parsley, a splash of vinegar, a couple of tablespoons of the herbes de Provence, salt and pepper.
An advice
This recipe is ideal to prepare in two stages, for example if they are for dinner we can leave the sauce and candied potatoes prepared from the morning and fry at night and that's it.
